Quinoa, Pinenuts & Chickpeas Trial
My goal today is to work with pulses, grains, bulbs and dried fruits. So my counter is strewn with quinoa, pinenuts, chickpeas, raisins, almonds, cranberries, sundried tomatoes, shaved coconut, garlic in olive oil, basil olive oil, etc.
Right now I’m marinating the chickpeas in basil olive and white wine vinegar – off to buy chourizo and prawns for Paella. When I get back, I’ll load the photos and the rest of the post
Chicken dance
My mother used to have a large Pineware roaster which could take 2 chickens – great for Sunday supper for a very large family! Before the days of television in South Africa, this beauty was a sight to behold, as the two chickens gracefully rotated to succulent perfection.
Preparing the chicken properly was an art: twine, Robertsons Barbecue Spice and Aromat, and some oil. First, remove the giblets & season cavity with salt and spices, then tie the legs firmly together with the twine. String the twine around the wings and secure them so that they don’t flop about.
Then rub spice and oil all over chicken.
Lastly, insert the rod with the rod through the chicken from top to end and secure the screws on the contraption with the sharp teeth (have no idea what they’re called).
Load the roaster and then set the timer. 3 hours of slow cooking normally does it. Tender, succulent and good-looking chicken.
I was super-chuffed when I walked into Angels & Antiques just up the road from my house in Orange Grove, and there was the object of my childhood dreams! I only had R50 on me and it was priced at R350. I made a laybye and collected my treasure at month-end. Got home and there was no cord!
I searched all the 2nd hand shops to no avail, until I chanced upon a tiny little store in a narrow lane in Kalk Bay. As I walked past, I spied a kettle that sold old kitchen appliances and dishware. She had the cord but it belonged to a kettle. The kettle was R175. I bought the kettle just to get the cord but am now doubly proud, as I have a gorgeous retro kettle AND a working roaster, all for R525!
